Lemon Pancake Recipe

If you like eating homemade pancakes, you have to try these delicious lemon pancakes. They are very easy to make, all the ingredients are cheap, and you can get them in the nearest grocery store. This recipe has been in our family for many years. I remember when I was a kid and my grandmother made these pancakes. She told me that she had recipe from her mother. Then, when I was a little older, my mother taught how to make them. I really like these homemade lemon pancakes and that’s why I want to give you this recipe. I am pretty sure that you will not have any problems with making lemon pancakes. Making the batter is very easy and cooking pancakes even easier.

When making pancakes, it is important to have fresh ingredients. Then the taste of pancakes is much better. Another important thing is not to use electric mixer when making the batter. I advise you to use spoon or fork to whisk the mixture. All the other instructions I listed below. One more thing: flip pancakes only once because you don’t want them to become rubbery. Here is the recipe for delicious homemade lemon pancakes:

Ingredients:

  • 1 cup of self-rising flour
  • ½ cup of sour cream
  • 1 large egg
  • ½ cup of freshly squeezed lemon juice
  • 1 tablespoon of lemon zest
  • 1 tablespoon of unsalted butter melted
  • 2 tablespoons of sugar
  • Powdered sugar to sprinkle on top

How to make homemade lemon pancakes:

  1. In one bowl, mix sour cream, melted butter and egg.
  2. Then, add lemon juice and half of lemon zest. Stir slowly.
  3. Next, add sugar and flour and again stir carefully and slowly. Do not over mix the batter. It can have some lumps remaining, which will disappear during the cooking.
  4. Heat a frying pan or a griddle over medium high heat and brush it with few drops of oil or with butter.
  5. When frying pan is hot enough, pour about 1 tablespoon of batter for a silver-dollar sized pancakes.
  6. Cook pancakes on one side for about 3 minutes or until golden brown.
  7. Flip and cook again for about 2-3 minutes or until golden brown.
  8. Serve pancakes warm.

Banana White Chocolate Pancake Recipe

Without any doubts, these are one of my favorite ones. I have always liked eating pancakes, and lately making them has become my passion. I got this homemade pancake recipe from my best friend, after I stopped by for a lunch at her house and she totally surprised me with making these delicious banana white chocolate chip pancakes. I was positively surprised with this new taste. I ate many pancakes during my life, but I’ve never eaten them with white chocolate chips. If it is the same with you, I strongly recommend trying this combination of banana, white chocolate and pancakes.

To make these pancakes even better, I added some spices such as vanilla and ginger. Spices added rich and intense flavor to the pancakes and even when I was still cooking them, my whole family gathered in the kitchen because everyone wanted to be the first one to try them. Well, enough of talking, here is the recipe for these great banana white chocolate pancakes:

Ingredients:

  • 1 cup milk
  • 1 cup white chocolate chips
  • 1 tablespoon ground cinnamon
  • 2 cups all-purpose biscuit baking mix
  • 3 bananas, peeled and thinly sliced
  • 2 eggs
  • 1 teaspoon ground ginger
  • 1 teaspoon vanilla extract

How to make banana white chocolate pancakes:

And that’s why I want to share with you with some ideas and few good tips so that you will be able to make perfect homemade pancakes every time you wish to satisfy your sweet tooth and to surprise your family or friends. Thanks to following these simple rules you will realize how fun and easy is making pancakes from scratch. Here is very simple recipe with many interesting tips that will help you make the best homemade pancakes of your choice:

  • 1 cup flour
  • ¾ cup milk

Using Ingredients: remember that it is better to use fresh ingredients, do not use baking soda which is 2 years old  Always measure ingredients carefully, batter that is too thin can result in flat pancakes, and one which is too thick will not spread much at all, if you like your pancakes thinner, add more milk to the batter. It is very important to mix dry and wet ingredients in a separate bowls if you are making American style pancakes.

Making Batter: to make really fluffy pancakes, separate eggs. Add egg yolks where recipe calls for eggs and beat egg whites separately, and fold them at the end.  Do not use electric mixer and do not over mix the batter because this overdevelops the gluten, and your pancakes can be rubbery instead of being light and airy.  If you use baking soda to make batter, cook it immediately, because the liquid starts reacting and the batter will go flat. Do not worry if your batter have some lumps remaining, they will disappear during cooking. Remember that you can always make pancakes as you like them- so if the batter seems too thick, add a tablespoon of milk or buttermilk, if it seems too runny, you can add tablespoon or more of flour. Remember that batter made with wheat flour will thicken as it stands.

Griddle or frying pan: a griddle with a temperature control is very good for cooking pancakes. Set it on 375 degrees F when preheating and then turn down to 360 when you are cooking pancakes. If you do not have griddle, you can use a frying pan, which should be heat over medium high heat. Do not brush the griddle or frying pan with butter or oil until it is preheated. Do not add a lot of butter or oil, one tablespoon is enough when you are cooking 12 pancakes. If you notice that you really need more, do not add more than one tablespoon at once. Test if griddle is hot enough by sprinkling few drops of water. If drops dance and sizzle, the griddle is ready to use.

Pouring Pancakes to pour the batter onto the frying pan, you can use ladle. Remember that it is good to hold the ladle near the surface of the griddle. If you hold it to high, you can break the air bubbles in the batter. It is your choice how big or small pancakes you want, but usually it is advised to pour ¼ cup of the batter if you want bigger pancakes, and one or two tablespoons for smaller pancakes.

Cooking pancakes: do not flip pancakes more than one time because they can break easily. Remember that second side cooks faster than first, and it takes usually only half time to cook the other side. Use thin spatula to flip pancakes. First, lift only the edge of pancakes with spatula to see of pancake if golden brown and ready to flip. Never pat pancakes with spatula.

Serving pancakes: serve pancakes warm and arrange them nicely on a serving platter. Before serving pancakes, you may want to keep them in a warm oven so that they will not get cold before eating. Heat syrup in a microwave for about 20 seconds, garnish pancakes with some fruits, nuts or powdered sugar and spread the syrup on them.

Freezing pancakes: if you have some leftovers, you can always freeze them! Cool and wrap them in aluminum foil and place them in a freezer bag for up to month. To reheat, place them in a single layer on a baking sheet, cover with foil and heat at 350 degrees for about 10 minutes.

Potato pancakes are also known as latkes or latkas in Yiddish and Hebrew. Potato pancakes are shallow- fried pancakes of grated egg and potato. Often pancakes are flavored with onion. I usually top my potato pancakes with a variety of condiments. Sometimes I like them savory, whereas the other time I make them sweet with sugar and applesauce. If you rather have a taste for savory potato pancakes, try them out with some sour cream- yummy. Many times I fed my family with these potato pancakes even without any toppings or sauces and still they were delicious and disappeared from the plates with a big speed.

Potato Pancakes are a very delicious and warm thing to eat. They have a lot more flavor and taste than other pancakes. Potato pancakes are commonly associated with traditional Polish, Ukrainian, German, Czech and Hungarian cuisine. Other countries like Belarus, India or Korea have similar potato pancakes.

Here, I present one of my favorite potato pancakes recipe. It is easy to make and you can serve your pancakes for breakfast, lunch or dinner.

Potato Pancakes Recipe

Ingredients:

  • 2 large egg whites
  • 2 medium baking potatoes
  • 2 Tbsp flour
  • 2 tsp Canola oil
  • 2 Tbsp coarsely grated onion
  • Pepper to taste
  • 1/2 tsp salt

How to make Potato Pancakes:

  1. First, peel the potatoes and onion. Then shred them with a grater onto 2 paper towels. The, twist the towels and the potatoes over the sink to wring out the left liquid.
  2. Put potatoes to a mixing bowl.
  3. Separate egg yolks from egg whites. Beat egg whites in a small bowl until foamy and add to the potatoes. Add also onions, pepper and salt. Add flour and toss gently to blend.
  4. Take a frying pan or a heavy non-stick skillet and brush it with 1 tablespoon of the oil. Preheat for about 2 minutes on a medium heat.
  5. Put about ½ cup of potatoes mixture on the frying pan. Cook pancake for about 7 minutes. Don’t forget about flipping them to the other side during the cooking. Pancakes should be browned and crispy.
  6. When ready, put your potato pancakes on the plate. Repeat the process with the remaining batter. Serve pancakes with applesauce or sour cream.

Tips:

  • You can put sugar on the pancakes after you fry them to give them extra flavor. But only if you want to make them sweet.
  • When frying, use a generous amount of oil. I use peanut oil sometimes, which doesn’t burn during the cooking process.

Low carb pancakes are not only healthier but are also very delicious. If you like eating pancakes, but you prefer to eliminate carbohydrates from your diet, try these yummy low carb pancakes. They are great for breakfast, lunch, dinner or snack. You can serve them with sugar-free maple syrup or with sugar-free jam.

Ingredients for low carb pancakes:

  • 1 cup coconut milk
  • 1 cup of blueberries( if desired)
  • 1 cup sifted oat flour
  • 3 large eggs
  • 1/2 cup coconut flour (or little less)
  • 1 tsp. baking powder
  • 1/2 teaspoon sea salt
  • 2 tsp. vanilla extract
  • 2 tablespoons sugar-free sweetener (or more)

How to make Low Carb Pancakes:

  1. In one bowl whisk together oat flour, coconut flour, baking powder and salt.
  2. Separate egg yolks from egg whites. Take another bowl and whisk the egg yolks, milk and vanilla. Add the dry ingredients and whisk until the batter is smooth.
  3. Use electric mixer and beat egg whites at medium speed until frothy. And beat at high speed until soft peaks appear. Fold egg whites to the batter and whisk it.
  4. Heat a large non-stick pan and lightly butter it. Pour ¼ cup of batter onto the pan. Cook pancake over medium-high heat until bottoms are golden and you see that pancakes are beginning to set.
  5. Sprinkle each pancake with a few blueberries and press lightly. Flip pancakes and cook until golden on the bottom and cooked through.
  6. Transfer pancakes to a plate and keep them in the warm place. Serve with maple syrup.
  7. You can freeze these pancakes. Freeze pancakes in layers with waxed paper in between.


Additional Tips For Delicious Low Carb Pancakes:

  • You can use buttermilk ot yogurt, instead of other milk type products.
  • Add ingredients like cinnamon, fruits, nuts or meat on top as the first side is cooking.
  • For thinner pancakes add more milk or water and don’t add raising agent.

Thin Pancakes Recipe

Thin pancakes, also called Crêpes are making a comeback in America. Crêpe is a type of very thin pancake usually made from wheat flour. The word “crêpe” is of  French origin, deriving from Latin crispa. French thin pancakes originate from Brittany, a region in northwest of France. Today Crêpes are considered a national French dish.

Thin pancakes can be served with various dips and plain fillings such as fresh fruits, honey, jam, chocolate, or sour cream. You can also staff your crêpes with some complex fillings like meat and rice, or mushrooms, chicken and cheese. Or add some vegetables to your savory thin pancakes.

There are many commercial mixes for crêpe batter, but you don’t need one. Here is a thin pancake recipe. This traditional French pancake recipe is quite easy to make, and the delicate pancakes taste delicious.

Thin pancake recipe

Ingredients:

  • 2 eggs
  • 1 ¼ cups milk
  • 1 tablespoon butter
  • ¾ cup of all-purpose flour
  • Pinch of salt

How to make thin pancakes:

  1. Take a small saucepan and warm the milk and butter until the butter melts. Set the saucepan aside to cool a bit.
  2. Next, use food processor with a steel blade and process the flour and salt together. While processing, pour the milk mixture and eggs. Process until it is blended.
  3. Then, pour the batter into the bowl and let it rest for half an hour.
  4. Next, add 1 tablespoon of vegetable oil to the hot non-stick skillet. With a large spoon, pour two big tablespoon of batter to the pan. Use the bottom of the ladle to spread butter to the edges.
  5. When you notice that the batter loses its sheen and the edges begin to brown, flip the pancakes with a spatula. The other side will cook faster than the first side so be careful.
  6. Remove the pancake from a pan and put on a plate. You can cover it with wax paper.
  7. Repeat the same process with remaining batter.
  8. Serve pancakes with desired dip and filling.

I hope you like this pancake recipe because it is one of my favorite one. I hardly resist these delicious homemade pancakes when I see them.
